How to Make the Perfect Kolokithokeftedes Greek Courgette Balls

What are Kolokithokeftedes?

Kolokithokeftedes, or Greek zucchini fritters, are a delicious and versatile dish that is perfect for any occasion. Made with fresh zucchini, feta cheese, and a variety of herbs and spices, these fritters are crispy on the outside and tender on the inside.

Ingredients:

  • 2 pounds large zucchini
  • 1/2 cup chopped onion
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped fresh mint
  • 1/2 cup crumbled feta cheese
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil

Instructions:

  1. Grate the zucchini on the wide holes of a grater or in a food processor.
  2. Place the grated zucchini in a large colander and sprinkle with salt. Let drain for 10 minutes.
  3. Squeeze the zucchini to remove as much water as possible.
  4. In a large bowl, combine the zucchini, onion, parsley, mint, feta cheese, flour, baking powder, salt, and pepper.
  5. Add the olive oil and mix until well combined.
  6. Heat a large skillet over medium heat. Drop the zucchini mixture by spoonfuls into the hot skillet and flatten with a spatula.
  7. Cook for 3-4 minutes per side, or until golden brown and crispy.
  8. Serve hot with your favorite dipping sauce.

Tips:

  • For the best flavor, use fresh, in-season zucchini.
  • If you don't have fresh herbs, you can use dried herbs instead. Just be sure to use half the amount, as dried herbs are more concentrated.
  • These fritters can be made ahead of time and reheated in the oven or microwave.
